Martin Chiffers

Martin Chiffers is a very experienced executive pastry chef and international pastry consultant who has been working in the hospitality industry for over 35 years at some of world’s most famous hotels and largest food and beverage operations in London, Singapore, Korea and Dubai. 

Working in Asia and the Middle East for 12 years, Martin gained a wealth of experience of foreign cuisines, regional patisserie and trends from different countries.

Organising very large pastry kitchens and looking after various in-house and offsite bakeries and deli shops, producing all products in house, including vast amounts of Asian and artisan breads, has given him a great business sense when increasing revenues.

Chef Chiffers repertoire of desserts and pastries encompasses all aspects from breads to chocolate pralines and fine dining desserts. With his forte in the culinary art of cooked and pulled sugar and chocolate showpieces, he has earned numerous gold medals at several prestigious international culinary competitions in the UK, France, Switzerland, the United States, Singapore, Dubai and at the Culinary Olympics in Luxembourg.

Winner of the Caterer Awards Middle East Pastry Chef of the Year 2010.

Martin Chiffers and his team have won the European Pastry Cup Coupe du Monde de la Pâtisserie three times in 2012, 2014 and 2022 held in Paris and Geneva.

Ranked 9th, 6th, 8th and 5th in the World in 2013, 2015, 2017 and 2019, with Best Sugar in the 2017 and 2019 Coupe du Monde de la Pâtisserie finals, Martin has gained a reputation for leading his teams to achieve the most victorious results and numerous accolades in the pastry culinary field.

Martin was support coach for the UK pastry team who ranked 4th place at the 2021 European Pastry Cup in Paris.

Coach for Team Chile and Hans Ovando, the winners of the Copa Maya in Mexico 2018 and Norways Best Chocolate Showpiece at the Nordic Cup 2018. Martin also coached Team India for the Asian Pastry Cup at the same time who ranked 5th place in Singapore.

In 2017 Martin was awarded Best Showpiece at the UK World Chocolate Master for his (AI) themed chocolate showpiece the beautiful robotic artificial intelligence sculpture of #Shushan of future The Futropolis.

In 2018 Martin also Coached Barry Johnson to 8th place at the World Chocolate Masters in Paris.

Martin was coach for Ruth Hinks at the World Chocolate Masters in 2013. Ruth achieved a top 5 position, the highest ever for The UK.

In 2021 Martin was coach for Stephen Trigg, the winner of the UK and Ireland World Chocolate Masters Selection, and will be looking forward to seeing Stephen competing in the 2022 World Final in Paris.

Martin was a judge for Afternoon Tea UK and is an active coach, demonstrator and international pastry consultant for local and international chefs, restaurants, hotels, shops and other food and chocolate businesses around the world.

Martin wrote the best seller BBC Crème de La Crème recipe book.

Expert consultant for BBC TV show Bake Off Creme de La Creme, series 1 & 2. Martin conducted the candidate interviews, planned the kitchen design, equipment, ingredient selection, pastry and display samples. He also live filmed works for the TV Show, including a special filming for the intro to the series.
